Across the hall from our Apple Valley Chamber in the former Eagle Valley Bank Building at Galaxie Avenue and 147th (seen above), a new coffee shop is well under construction. Expected to open this fall, it will employ those with physical and neurodiverse special needs. Liza Robson whose family owns Apple Valley Redi-Mix (AVR), has a son Matty who was diagnosed with Autism at age 2 and a half. He is now in college and Liza has watched him succeed and wants to offer employment opportunities for other families with kids with different abilities. Below is a letter from Liza which explains it well. Note: The name Constellation Coffee comes from it being located on Galaxie Avenue and the logo was designed by her son’s former high school art teacher.
