EXCLUSIVE LOOK INSIDE NEW MEXICAN GROCERY & RESTAURANT

This week, we met with one of the owners of the new Mexican grocery and restaurant located next to Kelly Park in Apple Valley. HOMSHUK MEXICAN KITCHEN & BAR plans to open on Monday August 28th so that staff can get some experience under their belt before what is sure to be a busy opening weekend. They plan to open the BODEGA 42 MEXICAN GROCERY STORE that same week also as equipment is installed and deliveries and stocking needs to be timed perfectly for freshness.

We first reported last August the drawings and plans to you. Located across from Culver’s, it will be a large 21,350 ft total building. The restaurant and bar will seat 105 and 95 on the duel covered patios.  Both are owned and operated by Fernando Mellado-Barboza, Saul Mellado-Barbosa and Ezequiel Quijada.  Fernando is owner of Andale Taqueria in Minneapolis and Mercado Mexican Restaurant in Richfield since 2011. Saul owns Orale Mexican Eats and Bar in South Minneapolis and is a CPA.
