NEW BREAKFAST SPOT OPENS IN EAGAN

We bring this opening to you not so much to promote but to share the uniqueness of what we found while dining there. Open for just a few weeks in front of CUB in Eagan on Diffley just north of Lexington, Hope Breakfast was quite good yet a little expensive. Their menu is trust us, almost nothing as far as breakfast combinations you’ve seen before and they also have a Bloody Mary bar. The interior and the patio were both quite large though from the outside it looks small. The food was outstanding and most of the menu at nearly or just over $20 with about 40 choices. Breakfast for one on our bill was about $33 with entree and $6 for a cup of coffee., tax, gratuity and fees. The service was great. NOTE: The four of us present were surprised to see something that is more common north of the river but the fist we’ve seen it here. They didn’t announce anywhere until we received the bill that a 4% surcharge was automatically added to the bill to “provide our employees living wages and options for benefits. This is NOT a gratuity.” One of the business owners in our party asked us “we were not informed but also, how do we know the employees who tend to be short term are actually receiving this 4%?” Good question.
